Ham and Bean Soup

Ingredients
  • 1 Tablespoon olive oil
  • 1 medium carrot, chopped
  • 1 stalk celery, chopped
  • ¼ cup chopped onion
  • 1 garlic clove, minced
  • 1 (15.8 ounces) can no-added salt Great Northern beans, drained and rinsed
  • 2 cups no added salt chicken or vegetable stock
  • ½ cup chopped ham
  • ½ teaspoon mustard
  • 1 bay leaf
  • ¼ teaspoon pepper
Directions
  1. Wash hands with soap and water.
  2. In large saucepan, sauté carrot, celery and onion in oil until tender.
  3. Add garlic and cook for 1 minute.
  4. Stir in remaining ingredients and bring to boil; reduce heat and simmer 15 minutes.
  5. Discard bay leaf and serve.
