Morel Vegetable Medley

Ingredients
  • 2 Tablespoons margarine or butter
  • 1 shallot, chopped
  • 1 clove garlic, minced
  • 2 small bunches asparagus, cut into 1 inch pieces
  • ½ lb. fresh morels, sliced lengthwise
  • Salt and pepper to taste
Directions
  1. Melt the margarine or butter in a skillet over medium heat.
  2. Add the shallot, garlic, asparagus and morels.
  3. Sauté until vegetables are tender, usually 10-15 minutes.
  4. Salt and pepper to taste.
