Chickpea Salad

Ingredients
  • 1 (15 oz.) can chickpeas, rinsed and drained 

  • 2 cups cucumber, seeded and chopped 

  • 2 roma tomatoes, chopped 

  • ¼ cup chopped red onion 

  • 3 Tablespoons chopped fresh parsley 

  • ¼ cup olive oil 

  • 2 Tablespoons lemon juice 

  • 1 clove garlic, minced 

  • 1 teaspoon Italian seasoning 

  • ¼ teaspoon salt  

  • ¼ teaspoon pepper  

Directions
  1. In a medium bowl, stir together chickpeas, cucumber, tomatoes, onion and parsley. 
  2. In a small separate bowl, whisk oil, lemon juice, garlic and seasonings. 
  3. Pour over chickpea mixture and stir to coat.
