Ingredients
1 (15 oz.) can chickpeas, rinsed and drained
2 cups cucumber, seeded and chopped
2 roma tomatoes, chopped
¼ cup chopped red onion
3 Tablespoons chopped fresh parsley
¼ cup olive oil
2 Tablespoons lemon juice
1 clove garlic, minced
1 teaspoon Italian seasoning
¼ teaspoon salt
¼ teaspoon pepper
Directions
- In a medium bowl, stir together chickpeas, cucumber, tomatoes, onion and parsley.
- In a small separate bowl, whisk oil, lemon juice, garlic and seasonings.
- Pour over chickpea mixture and stir to coat.
