Ingredients
Salad
- 2 (3 oz.) packages lemon gelatin
- 4 cups hot water
- 1 cup miniature marshmallows
- 1 (20 oz.) can crushed pineapple, drain and save juice for topping
- 4 small bananas, diced
Topping
- ½ cup sugar
- 2 eggs, beaten
- 2 Tablespoons all-purpose flour
- 1 cup reserved pineapple juice
- 1 cup thawed whipped topping
Directions
- Heat water over stovetop or microwave.
- Stir in both packages of gelatin mix until dissolved.
- Stir in marshmallows, drained pineapple (reserve juice) and banana slices.
- Pour into 13x9-inch pan.
- Place in refrigerator to set.
- In a medium saucepan, combine all ingredients except whipped topping.
- Cook on medium heat until thickened, stirring occasionally.
- Fold in whipped topping.
- Spread evenly over the set gelatin and refrigerate until ready to serve.
