Frosted Banana Salad

Ingredients

Salad

  • 2 (3 oz.) packages lemon gelatin
  • 4 cups hot water
  • 1 cup miniature marshmallows
  • 1 (20 oz.) can crushed pineapple, drain and save juice for topping
  • 4 small bananas, diced

Topping

  • ½ cup sugar
  • 2 eggs, beaten
  • 2 Tablespoons all-purpose flour
  • 1 cup reserved pineapple juice
  • 1 cup thawed whipped topping
Directions
  1. Heat water over stovetop or microwave.
  2. Stir in both packages of gelatin mix until dissolved.
  3. Stir in marshmallows, drained pineapple (reserve juice) and banana slices.
  4. Pour into 13x9-inch pan.
  5. Place in refrigerator to set.
  6. In a medium saucepan, combine all ingredients except whipped topping.
  7. Cook on medium heat until thickened, stirring occasionally.
  8. Fold in whipped topping.
  9. Spread evenly over the set gelatin and refrigerate until ready to serve.
