Indian Style Bitter Melon

Ingredients
  • 1 Tablespoon oil 

  • 1 bitter melon 

  • 2 potatoes, peeled and cut in long strips 

  • 1 onion, peeled and chopped 

  • 2 tomatoes, cored and chopped 

  • 1 ½ teaspoons coriander 

  • 1 teaspoon cumin 

  • ½ teaspoon mango powder 

  • ½ teaspoon salt 

  • ½ teaspoon black pepper 

  • ¼ teaspoon turmeric 

  • ¼ teaspoon chili powder 

Directions
  1. Trim ends of melon and cut in half. 

  2. Scoop out the white pith and seeds and discard. Chop into pieces. 

  3. In a large skillet, heat oil over medium-heat. 

  4. Add melon, potatoes and onion. Cover and cook until just tender. 

  5. Stir in tomatoes and seasonings. Cook on medium-low heat. 

  6. Serve warm.
