Pumpkin Parfait

Ingredients

Parfait:

  • 1 (15 oz.) can pumpkin puree
  • 3 cups low-fat vanilla yogurt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves

Granola:

  • ¼ cup pecan pieces
  • ½ cup quick cooking oats
  • ½ cup crisp rice cereal
  • 1 Tablespoon vegetable oil
  • ¼ cup brown sugar

 

Directions
  1. Preheat oven to 325°F.
  2. In a large bowl, whisk pumpkin, yogurt and spices.
  3. In another bowl, stir the granola ingredients.
  4. Spread granola evenly onto a baking pan.
  5. Bake for 10 minutes; cool.
  6. Spoon half the pumpkin mixture into 6 cups or bowls.
  7. Layer granola and the rest of the pumpkin mixture in each cup or bowl.
  8. If desired, add a spoonful of whipped topping before serving.
  9. Refrigerate leftovers.
