Ingredients
Parfait:
- 1 (15 oz.) can pumpkin puree
- 3 cups low-fat vanilla yogurt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cloves
Granola:
- ¼ cup pecan pieces
- ½ cup quick cooking oats
- ½ cup crisp rice cereal
- 1 Tablespoon vegetable oil
- ¼ cup brown sugar
Directions
- Preheat oven to 325°F.
- In a large bowl, whisk pumpkin, yogurt and spices.
- In another bowl, stir the granola ingredients.
- Spread granola evenly onto a baking pan.
- Bake for 10 minutes; cool.
- Spoon half the pumpkin mixture into 6 cups or bowls.
- Layer granola and the rest of the pumpkin mixture in each cup or bowl.
- If desired, add a spoonful of whipped topping before serving.
- Refrigerate leftovers.
