Ingredients
- 1 (15 oz.) can pumpkin puree
- 1 (12 oz.) can evaporated skim milk
- 1 teaspoon pumpkin pie spice
- ½ teaspoon ground cinnamon
- 1 (1 oz.) box sugar-free vanilla instant pudding mix
- Optional toppings: whipped cream and toasted pecans
Directions
- Wash hands with soap and water.
- In a large mixing bowl, beat pumpkin, evaporated milk, pumpkin pie spice and cinnamon with an electric mixer.
- Add pudding mix and beat for 2 minutes.
- Immediately pour into 6 individual cups and refrigerate until set.
- Add whipped cream and toasted pecans just before serving, if desired.
