Pumpkin Pudding

Ingredients
  • 1 (15 oz.) can pumpkin puree
  • 1 (12 oz.) can evaporated skim milk
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • 1 (1 oz.) box sugar-free vanilla instant pudding mix
  • Optional toppings: whipped cream and toasted pecans
Directions
  1. Wash hands with soap and water.
  2. In a large mixing bowl, beat pumpkin, evaporated milk, pumpkin pie spice and cinnamon with an electric mixer.
  3. Add pudding mix and beat for 2 minutes.
  4. Immediately pour into 6 individual cups and refrigerate until set.
  5. Add whipped cream and toasted pecans just before serving, if desired.
