Ingredients
1 ½ Tablespoons olive oil
1 lb. fresh scallops
¼ teaspoon salt
¼ teaspoon black pepper
¼ cup chopped shallots
1 garlic clove, minced
½ cup dry white wine
3 Tablespoons chopped fresh parsley
Directions
- In a large skillet, add oil and heat over medium-high heat.
- Add scallops, season with salt and pepper, and cook until slightly brown on bottom; flip scallops and slightly brown on the other side.
- Reduce heat to medium. Add shallots and garlic; cook, stirring frequently for 2 minutes.
- Stir in wine and cook until liquid starts to reduce, about 1-2 minutes.
- Remove from heat and sprinkle with parsley.
