Scallops Provençal

Ingredients
  • 1 ½ Tablespoons olive oil 

  • 1 lb. fresh scallops 

  • ¼ teaspoon salt 

  • ¼ teaspoon black pepper 

  • ¼ cup chopped shallots 

  • 1 garlic clove, minced 

  • ½ cup dry white wine 

  • 3 Tablespoons chopped fresh parsley 

Directions
  1. In a large skillet, add oil and heat over medium-high heat. 
  2. Add scallops, season with salt and pepper, and cook until slightly brown on bottom; flip scallops and slightly brown on the other side. 
  3. Reduce heat to medium. Add shallots and garlic; cook, stirring frequently for 2 minutes. 
  4. Stir in wine and cook until liquid starts to reduce, about 1-2 minutes. 
  5. Remove from heat and sprinkle with parsley.
