Spinach Zucchini Casserole

Ingredients
  • 1 Tablespoon olive oil
  • 2 small zucchini, chopped
  • 2 small yellow squash, chopped
  • 3 cups spinach 
  • 1 egg
  • ¼ cup crumbled reduced fat feta cheese
  • ¼ cup grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon basil
  • ½ teaspoon black pepper
  • ¾ cup panko breadcrumbs
Directions
  1. Preheat oven to 400°F and spray a 9x13-inch pan with cooking spray. 
  2. Heat oil in a large skillet over medium heat. 
  3. Add zucchini, yellow squash and spinach, cooking for about 5 minutes until spinach is wilted. Dab with paper towel to remove any excess liquid. 
  4. Add remaining ingredients except breadcrumbs. 
  5. Stir and pour into prepared pan. 
  6. Sprinkle breadcrumbs over top. 
  7. Bake for 30-40 minutes until golden brown on top.
