Ingredients
- 1 Tablespoon olive oil
- 2 small zucchini, chopped
- 2 small yellow squash, chopped
- 3 cups spinach
- 1 egg
- ¼ cup crumbled reduced fat feta cheese
- ¼ cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon basil
- ½ teaspoon black pepper
- ¾ cup panko breadcrumbs
Directions
- Preheat oven to 400°F and spray a 9x13-inch pan with cooking spray.
- Heat oil in a large skillet over medium heat.
- Add zucchini, yellow squash and spinach, cooking for about 5 minutes until spinach is wilted. Dab with paper towel to remove any excess liquid.
- Add remaining ingredients except breadcrumbs.
- Stir and pour into prepared pan.
- Sprinkle breadcrumbs over top.
- Bake for 30-40 minutes until golden brown on top.
