1 Tablespoon olive oil
1 medium yellow onion, diced
5 cloves garlic, minced
1 lb. lean ground turkey
1 can (28 oz.) diced tomatoes
1 can (16 oz.) tomato sauce
½ cup chicken broth
2 medium sweet potatoes, cubed
1 can (15 oz.) black beans, drained and rinsed
1 can (15 oz.) corn
1 Tablespoon chili powder
1 Tablespoon paprika
1 Tablespoon Italian seasoning
1 Tablespoon black pepper
In a large pot, sauté diced onion and minced garlic in olive oil for 2-3 minutes under medium heat, or until fragrant.
Add ground turkey, breaking it up as it cooks until no longer red/pink.
Add remaining ingredients. Bring to a boil, then lower to medium heat, and simmer for another 15 minutes, or until sweet potatoes are soft and can easily be pierced with a fork.
Divide chili into bowls and consider garnishing with shredded cheese and sliced avocado.
