Ingredients
- 12 oz. orzo pasta
- 1 Tablespoon oil
- 2 carrots, diced
- ½ onion, diced
- 1 cup fresh broccoli, chopped
- 2 cloves garlic, minced
- 3 eggs, lightly beaten
- ¾ cup frozen peas
- ¼ cup light soy sauce
- ½ teaspoon fresh ginger, diced
Directions
- Wash hands with soap and water.
- Cook orzo according to package directions and set aside.
- Heat oil in a large skillet medium-high heat.
- Add carrots, onion and broccoli; cook 2-3 minutes until tender.
- Add garlic and cook 1 minute.
- Transfer veggies to a bowl.
- Spray the same skillet with cooking oil.
- Pour in beaten eggs and let cook, stirring frequently, until eggs are set.
- Add cooked veggies and orzo back to the skillet; stir in peas, soy sauce and ginger.
- Heat until peas are cooked.
- Remove from heat and serve.
