Veggie Fried Orzo

Ingredients
  • 12 oz. orzo pasta
  • 1 Tablespoon oil
  • 2 carrots, diced
  • ½ onion, diced
  • 1 cup fresh broccoli, chopped
  • 2 cloves garlic, minced
  • 3 eggs, lightly beaten
  • ¾ cup frozen peas
  • ¼ cup light soy sauce
  • ½ teaspoon fresh ginger, diced
Directions
  1. Wash hands with soap and water.
  2. Cook orzo according to package directions and set aside.
  3. Heat oil in a large skillet medium-high heat.
  4. Add carrots, onion and broccoli; cook 2-3 minutes until tender.
  5. Add garlic and cook 1 minute.
  6. Transfer veggies to a bowl.
  7. Spray the same skillet with cooking oil.
  8. Pour in beaten eggs and let cook, stirring frequently, until eggs are set.
  9. Add cooked veggies and orzo back to the skillet; stir in peas, soy sauce and ginger.
  10. Heat until peas are cooked.
  11. Remove from heat and serve.
