Winter Fruit and Spinach Salad

Ingredients
  • 4 cup fresh spinach leaves
  • 1 medium ripe pear, thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 medium red onion, thinly sliced
  • 2 Tablespoons chopped pecans or other nuts (optional)
  • 1/4 cup fresh parmesan cheese, shaved
  • 1/4 cup oil
  • 1/4 cup juice of an orange
  • 1 teaspoon orange zest
  • 1 teaspoon sugar or honey
  • 1/4 teaspoon ground black pepper
Directions
  1. Wash hands with soap and water.
  2. Add spinach leaves to a serving bowl.
  3. Top with pear slices, dried cranberries, onion slices, nuts (if using), and cheese.
  4. Make dressing: whisk oil, orange juice, orange zest, sugar or honey, and black pepper in a small bowl.
  5. Pour dressing over salad and serve.
