Ingredients
- 1 package (5 oz.) baby arugula
- 2 pears, cored and thinly sliced plus 1 pear, cored, peeled and chopped
- 1 mini cucumber, sliced
- 1 cup walnut pieces
- 2⁄3 cup crumbled goat cheese
- 1⁄2 cup pomegranate arils
- 1⁄3 cup olive oil
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons water, plus more if needed
- 1 Tablespoon Dijon mustard
- Salt and pepper
Directions
- Wash hands with soap and water.
- Toss arugula, 2 sliced pears, cucumber, walnuts, goat cheese and pomegranate arils in large bowl.
- For dressing, pulse 1 peeled pear in food processor until it starts to break down.
- With processor running, add oil, vinegar, water and mustard. (Add a little more water if needed.)
- Stop machine; add salt and pepper, to taste.
- Process until smooth and creamy.
- Toss salad with some of dressing, then serve with remaining dressing on the side.
