Winter Pomegranate Pear Salad

Ingredients
  • 1 package (5 oz.) baby arugula
  • 2 pears, cored and thinly sliced plus 1 pear, cored, peeled and chopped
  • 1 mini cucumber, sliced
  • 1 cup walnut pieces
  • 2⁄3 cup crumbled goat cheese
  • 1⁄2 cup pomegranate arils
  • 1⁄3 cup olive oil
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons water, plus more if needed
  • 1 Tablespoon Dijon mustard
  • Salt and pepper
Directions
  1. Wash hands with soap and water.
  2. Toss arugula, 2 sliced pears, cucumber, walnuts, goat cheese and pomegranate arils in large bowl.
  3. For dressing, pulse 1 peeled pear in food processor until it starts to break down.
  4. With processor running, add oil, vinegar, water and mustard. (Add a little more water if needed.)
  5. Stop machine; add salt and pepper, to taste.
  6. Process until smooth and creamy.
  7. Toss salad with some of dressing, then serve with remaining dressing on the side.
