Staci Coussens is a SNAP-Ed Educator with Illinois Extension. She works in the community helping to make the healthy choice the easy choice for our most vulnerable population. Staci works with agencies like food pantries, daycare centers, schools, and homeless shelters to change the environment, systems and their policies that will encourage their guests, students and families to make the healthy choice. Some ways she accomplishes this goal is by changing the layout of the pantry so the healthy choice is more convenient to select, working with the food service staff to plan healthier meals and find ways to incorporate new fruits and vegetables into their menu, and helping with wellness policy creation for students, parents and staff at schools.

Staci has a Bachelor's degree in Family and Consumer Sciences - Food, Nutrition, and Dietetics - from Illinois State University and a Master's degree in public health from University of Illinois of Springfield. She is a Nutrition and Dietetics Technician, Registered. Her professional affiliations include the Academy of Nutrition and Dietetics, the Illinois Extension Association of Family and Consumer Sciences, and the National Extension Association of Family and Consumer Sciences.
