Elizabeth Cook is committed to improving access to healthy foods and encouraging healthy eating and physical activity in limited-resource communities. In her role as a SNAP-Ed Educator for University of Illinois Extension, Elizabeth collaborates with local organizations and partners, such as food pantries and schools, to plan and implement policy, systems, and environmental changes to make the healthy choice the easy choice in Cook County communities.
Before joining Illinois Extension, Cook worked with the Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) in Chicago and SNAP-Ed in Tennessee.
Elizabeth received a Master of Science degree in Nutrition and Food Systems from the University of Southern Mississippi and a Bachelor of Science degree in Health and Human Sciences from the University of Tennessee. She is a Registered Dietitian and an active member of the Academy of Nutrition and Dietetics.
